Soaked

Water and particle are precisely weighed before a 24hr soak. The pre-soak softens and hydrates the particles externally to prepare for cooking.

Microbe fuel

A sugar solution is mixed through the soaked particles before ramping up the temperature. Sugar is microbe fuel that then cooks into the core of the particles prior to the fermenting stage.

Precision cooking

The particles are heated to a precise temperature for a controlled period of time. A thorough process that preserves nutrient integrity whilst optimising microbial accessibility of each particle.

Cooling

The cooked particle is then cooled down to the optimal temperature for microbial activity to commence. Maintaining continuous agitation up to this point keeps each batch consistent throughout.

Fermentation

For the next 72 hours, the particles are held at enzyme optimal temperatures with agitation at intervals only, whilst organic acids, amino acids and alcohols develop. These are the feeding signals that don't get the opportunity to establish in freshly cooked and immediately frozen particles.

Bagged and frozen

The particles are produced to a consistency which flows, retaining the liquids that they're cooked in. The finished product is a thick gloop of rich natural attractors. Bagged, vacuum packed and frozen in neat slabs for rapid thawing when required.

Particles don't attract fish. The organic acids do.
